Mango Quinoa Salad is a tart, sweet, and tangy dish, filled with color and texture. The mangoes add a sweet note to this salad and it’s filling enough to be a main dish as well. I’ve eaten this salad for lunch many times.

I love using tri-color quinoa. Not only is it more pretty, but it has a more crunchy texture and even contains a few more nutrients than regular white quinoa. The salad mellows and creates a wonderful combination of flavors and textures after resting a while. I think adding something sweet to any quinoa dish- bell peppers, tomatoes, cucumbers, etc., helps balance the natural bitter flavor of the grain. Like other grains, Quinoa is high in fiber. But unlike others, it’s high in protein, high in iron, and has a low glycemic index. It’s super hearty, and because it’s high in protein and iron, it’s a favorite ingredient for vegans, since many people get most of these nutrients from meat.

Cook the quinoa according to package direction and then cool to room temperature. Combine the quinoa, beans, mango, pepper, onions and tomatoes in a large bowl and toss to combine. Now whisk some lime juice and zest with some olive oil, salt, and pepper in a bowl. Pour over salad and toss to coat thoroughly. For best results, let rest sometime. Enjoy!
